When you change the offset by 7mm (from 28mm to 35mm) you are pushing the wheel to the inside of the wheel well. Decreasing the tire width to 255 buys you 5mm back towards the center of the vehicle as well. So by changing from 265/35/18 +28 to 255/35/18 +35, you brought the outermost edge back into the wheel well by 12mm = 1.2cm = .5in. It is quite likely, a 255 tire on an 18" rim with a 28mm offset will still rub, because now you are pushing the wheel 7mm away from the center of the car again. It all depends on how much arc distance change makes the rub happen. If you can spare .25in, this might work.
